Easy- Peasy Pumpkin Soynog Chia Seed Pudding November 15, 2013


I created this recipe during the last holiday season. And, since it’s is about as easy as a recipe get, it’s pretty great for this frenzied time of year. Pssst…Don’t tell the kids, but it’s healthy too. All you need is:

  • 2 cups pumpkin spice soynog, or nog of your choice
  • 1/2 cup chia seeds
  • 1 teaspoon vanilla, or to taste
  • Nutmeg to taste–optional


Mix the ingredients together with a fork. Put in fridge for about ½ hour. Re-stir with fork. The chia seeds REALLY like each other and clump together with enthusiasm. Re-stir again after another half hour or so. By now it will be the consistency of pudding. It reminds me of tapioca pudding with miniature tapioca. Now pour into your prettiest desert glasses, sprinkle with a bit of nutmeg if desired, and chill until ready to eat.
