Swiss Chard Rolls


It was because of the mozzarella cheese that I created this recipe. It was on sale because the expiration date was up so I had to use it right away. Remembering that I also had some cooked brown rice and some rainbow Swiss chard in the fridge for too long that was also needing to be cooked, an idea popped into my mind. I started a marinara sauce simmering on the back burner, but if you are in a hurry, you can use some store bought sauce.


1 cup Marinara Sauce

½ cup cooked brown rice

½ cup Fresh Mozzarella cheese

2-4 Cloves Garlic, diced

½ Red Onion, diced

1 cup veggies, your choice

2-3 Leaves Swiss Chard

Sautée veggies until tender, add rice, then roll the veggie mix and cheese into Swiss chard leaves

Add the marinara sauce to a glass baking dish, roll up the veggie/rice mix and the mozzarella in the Swiss chard leaves, place the rolls into the glass baking dish on top of the sauce and bake it covered with tin foil at 350 degrees for 20 minutes, pulling off the foil for the last 5 minutes. This is good to serve with French bread a salad.
