Tomato Basil Soup September 28, 2015

I just bought a lug of tomatoes from the farmer down the road. That’s 30 pounds. I froze, dried, and canned most of them, but I saved a few out to make soup. It’s simple and prep time is under 30 minutes. It’s also very yummy.


4-5 Tomatoes

¼ cup Red Onion, chopped

3-5 Garlic Cloves, to taste

1 teaspoon Cornstarch

1 teaspoon Veggie Bouillon

1 cup Soy Milk

½ cup Water

Salt and Pepper to taste

1 teaspoon Thyme

Fresh basil to taste

1 tablespoon Nutritional Yeast


Sautee onions about 5 minutes, then add garlic. In the meantime, coarsely chop the tomatoes, and put in blender. Add the cornstarch and basil, and blend until smooth. Add the onions and garlic and blend again. Return to pan, add spices and simmer about 15-20 minutes.  This recipe can very easily be doubled and tripled. Serve warm with crotons.
