This recipe came about because I had leftover black beans, rice and a bit of sweet potatoes. I liked it well enough that I will make it again. The amounts can vary depending on your pantry and leftovers.
½ cup cooked black beans
¼ cup cooked brown rice
¼ to ½ cup sweet potato, diced
A small handful spinach, chopped fine
Red onion and garlic to taste.
1 tablespoon or so olive oil
Salsa, tomato, cheese.
Sauté the onion, garlic, spinach and sweet potato about 5 minutes. Add beans and rice and cook till heated. Spoon into taco shells and add toppings.
