Whenever I make mashed potatoes I always make extra so I can make a paddy or a cake for breakfast. These are easy and delicious. I like to top them with a fried egg, make a slice of tomato or some salsa.
Put about a tablespoon of four on a plate, then using a large spoon, place a large scoop of the leftover mashed potatoes on top and smash flat. Turn over the potato cake and coat with the flour. Place in hot pan with some olive or avocado oil and cook until browned, then flip and cook until that side is browned. Top with fried egg, or whatever sounds good.
